Ingredients:

2 Tablespoon extra-virgin Olive Oil

1 medium organic Onion, quartered

3 to 4 large garlic cloves

2 large sweet potato, peeled and diced

4 cups Chinese Herbal Chicken Bone Broth

1 pound organic boneless, skinless chicken

2-3 teaspoons kosher salt

4 sprigs fresh thyme

Directions:

  1. Place all ingredients in a 6-quart slow cooker. Stir to combine.
  2. Cover and cook on high for 4 hours or low for 6 or until the sweet potatoes are tender and the chicken is cooked through and very tender.
  3. Remove the chicken and shred with two forks. Return to the slow cooker and stir to combine. Taste and add additional salt to taste. Serve hot and enjoy
